Newfoundland Tea Biscuits

Ingredients

1 1/2 cups Atlantic Bakers All-Purpose Flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp salt
¾ cup butter
2 tsp vanilla extract
1 cup evaporated milk, undiluted
1 cup raisins, light or dark, your preference. Use up to 1 1/2 cups if you like.
2 tbsp lemon juice

Instructions

  1. Preheat oven to 375 degrees
  2. Use a food processor for a quick process or just a large bowl. In the food processor, blend flour, sugar, baking powder, and salt.
  3. Add butter until mixture resembles coarse meal.
  4. Transfer to a bowl, add raisins, and create a well in the center.
  5. In a mixing cup combine vanilla (optional) and milk.
  6. Pour liquid ingredients into the well, and combine until a dough ball forms.
  7. Roll out to 1-inch thickness, cut into 2.5″ to 3″ diameter circle with a cutter or other circular object
  8. Place on a parchment-lined baking sheet.
  9. Bake at 375°F for 20-25 minutes until golden brown. This recipe yields 12 tea biscuits.
