White Bread

Ingredients

  • 2 packets of yeast
  • 5 cups (1250ml) Bread & Roll Mix
  • 1 2/3 cups (400ml) warm water

Instructions

  1. In a large bowl, pour in the warm (not hot) water. Sprinkle the yeast from the enclosed packets over the water. Let it stand for 5 minutes, then stir gently.
  2. Gradually stir in half of the bread mix until moist and smooth. Beat the mixture well for 2 minutes.
  3. Add the remaining bread mix gradually, stirring until it forms a soft dough that leaves the sides of the bowl. Turn the dough out onto a floured board (using the remaining bread mix to flour the board) and knead until it forms a smooth ball and is no longer sticky, approximately 8 minutes. Use only enough flour to prevent sticking.
  4. Place the dough in a greased bowl, turning to grease the top of the dough. Cover it with wax paper and a damp tea towel. Let it rise in a warm place until doubled in size, about 30-45 minutes.
  5. Punch down the dough and divide it into 2 equal portions.
  6. Shape each portion into a loaf and place them in greased 8 1/2 x 4 1/2 (1.5L) loaf pans. Let them rise in a warm place until the dough rises 1″ – 1 1/2″ (2.5cm – 4cm) above the top of the pan in the center and the corners are filled, 50-60 minutes.
  7. Bake on the lower rack position at 375°F (190°C) for 30-40 minutes or until done. Remove the loaves from the pans immediately and cool them on a wire rack. Brush the tops with butter for a soft crust.
