Nova Scotia Oatcakes

Ingredients

  •  1 cup Atlantic Bakers All-Purpose Flour
  •  2 cups quick rolled oats
  •  ½ cup salted butter
  •  ¼ tsp salt
  •  ¼ tsp baking soda
  •  ½ cup brown sugar
  •  ¼ cup hot water (recently boiled)

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine dry ingredients.
  3. Add the butter to the dry ingredients in small chunks and use your hands to work it in. It should be crumbly but well combined.
  4. Add the hot water in two batches (you may not need all of it). Mix to form a form but almost sticky dough.
  5. Lightly sprinkle flour on a clean, dry surface. Place the dough in the centre of the surface and roll it out so it is a nice, even rectangle that is consistently about 1/4″ thick. Cover and chill for 20 minutes.
  6. Cut into evenly sized squares. Alternatively, you can cut circles. Whether circles or squares, you should aim to get around 12 from this recipe.
  7. Bake for 10-15 minutes until they are light golden brown. They should not be soft nor chewy. Cool for 10 minutes before serving.
